Soups on y’all! Tonight, I whipped up the easiest Green Tortilla Soup you could possibly make. Heres the recipe!
1 Jar Salsa Verde
1 Zucchini diced
1/2 Yellow Onion diced
2 Ears of Corn with the kernels cut off the cob
1 Can of Cannellini Beans
1 cup Shredded Rotisserie Chicken (Omit for vegan version)
1 Box Chicken Broth (Use vegetable broth for vegan version)
1 TBSP Olive Oil
Toppings: Diced Avocado, Sour Cream (Omit for vegan version), Tortilla Chips
Heat olive oil in large pot and sauté onions, corn, and zucchini until vegetables are soft.
Add in shredded chicken and sauté for a couple of minutes.
Add in the entire jar of salsa verde, can of beans, and the entire box of chicken broth.
Stir and bring to a boil. Lower the heat to low and simmer for 30 minutes. Serve with toppings and enjoy!
Make this soup vegan easily by leaving out the chicken and using vegetable broth instead of chicken broth! Voila! Vegan Tortilla soup!!
